Brisket... never had it before... we all liked it!!

Family Favorite Brisket
4 pounds fresh beef brisket
1 tsp. salt
2 tsp. dry mustard
2 tsp. paprika
1 tsp. garlic powder
pepper, to taste

Trim excess fat from meat. Combine seasonings until well blended; rub into brisket. Place meat in a greased 4-6 qt. slow cooker, with the side that had more fat on top, cutting to fit if necessary. Cover and cook on low heat for 10-12 hours. Remove meat from liquid and cut across grain into thin slices.

My pickiest eater had 2 servings!! It's a miracle!!

Tortilla Chip Enchiladas

2 C. cooked chopped chicken
2 cans cream of chicken soup
1 C. sour cream
1/4 C. chopped onion
1 bag (12 oz.) tortilla chips, crushed in bag
1 C. monterey jack cheese, grated
1/2 c. salsa(optional)

Preheat oven to 350. In a large bowl combine chicken, soup, sour cream, and onion.

In a greased 9x13 pan, layer half the chips and half the soup mixture. Repeat layers. Top with cheese and bake 30 minutes. Serve with salsa if desired.
makes 6-8 servings.

Nutella Banana Bread

Got this one off of pinterest! yummy!

Nutella Banana Bread

2 C. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/4 c. unsalted butter, at room temperature
1 c. sugar
2 large eggs
1 1/4 C. mashed ripe bananas
1/3 C. skim milk (I used 1%)
1 tsp. vanilla extract
3/4 heaping cup nutella

Preheat oven to 350. Spray loaf pan with nonstick spray.
In a medium bowl, whisk together flour, baking soda and salt.
In a seperate large bowl, beat sugar and butter with an electric mixer at medium speed until blended. add eggs, one at a time, beating well after each addition. add banana, milk and vanilla. Beat until blended.
Add flour mixture, beat at low speed just until flour is incorporated. (don't over mix.)
Spoon nutella into a small bowl and soften in the microwave for about 15 seconds. Add 1 cup of the banana batter to the nutella and stir until blended. Spoon nutella batter alternately with banana batter into the prepared pan. Swirl batters together with a knife.
Bake 50-60 minutes, it will seem a tiny bit undercooked but that's what makes it good. Cool for at least 15 minutes in the pan, and then turn out onto a wire rack to cool completely.

Two of my favorite things together.... HEAVEN!!

Dr. Pepper Chocolate Cake

1 1/2 C. Dr. pepper soda
1/2 C. vegetable oil or canola oil
1 stick unsalted butter (8 Tbsp.)
4 Tbsp. cocoa powder
1 1/4 C. sugar
2 C. flour
1 tsp. baking soda
2 eggs
1/2 C. buttermilk

Preheat oven to 350. Grease a 13x9 pan and set aside. Combine in a large saucepan, dr. pepper, oil, butter, and cocoa powder over medium heat. Bring to a simmer, mix well, and remove from heat. Add sugar, flour, and baking soda and mix well. In a seperate bowl, beat the eggs and buttermilk together, add a small amount of the hot batter to the egg mixture (a couple tablespoons) and mix well. Add the egg mixture to the batter and mix well.
Pour into greased pan and bake for 25 minutes or until a toothpick comes out clean.
While the cake is cooling, make the glaze.

Glaze
4 Tbsp. unsalted butter
2 Tbsp. cocoa powder
4 Tbsp. milk
2 C. powdered sugar

combine the butter, cocoa powder, and milk together in a saucepan over medium heat.
When the butter is melted and the mixture is combined, whisk in the sugar, 1/2 c. at a time, until fully incorporated and smooth. Pour over warm cake.

Slow cooker Hearty Steak and Tater Soup
*1 lb. boneless beef round steak, cut into 1 x 1/4 inch pieces.
1 lb. small red potatoes, cut into 1/4 inch slices
2 medium stalks celery, chopped
2 medium carrots, chopped
*1 medium onion, chopped
*2 cloves garlic, finely chopped
1 Tbsp. beef bouillon granules
1/2 tsp. pepper
4 cans (14 oz. each) beef broth
*1 jar (6 oz.) sliced mushrooms, undrained
1/2 c. water
1/2 c. flour

*I used stew meat, and minced onions, and left out the garlic and mushrooms!

In a large slow cooker, mix beef and remaining ingredients EXCEPT water and flour. Cover and cook on Low setting for 8-9 hours.
Mix water and flour in small bowl, gradually stir into soup until blended. Increase heat to High. Cover and cook about 30 minutes or until slightly thickened.

Dole Pineapple Whips

There are only a few places in the world where you can get these: Disneyland, Disney World, 1 other Disney park, the Dole plantation in Hawaii, and here! So, I don't know for sure if its the actual recipe...but it's good!!

Dole Pineapple Whips
2 20 oz. cans Dole crushed pineapple with juice
2 Tbsp. lemon juice
2 Tbsp. lime juice
1/3 C. sugar
1 1/2 C. heavy whipping cream, whipped

Drain pineapple; reserve 2 tbsp. juice. Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender. Cover and blend until smooth. Pour into two 1 qt. freezer zipped bags and store bags flat in freezer. Freeze 1 1/2 hours or until slushy. Stir pineapple slush gently into whipped cream until slightly blended, in a large bowl. Return to freezer until completely frozen, about 1 hour and serve.
